There are many up and coming craft distilleries in the Nordics, but Stauning in Denmark has one of the best reputations of them all. They value doing things the hard way, using only floor-malted rye and barley. And traditional open-fired stills create complex and deep flavors because the stills reach a much higher temperature (up to 650 ˚C). Their Stauning Rye is a liquid interpretation of freshly baked Danish rye bread.
