Koval was the first distillery to open in Chicago since the mid-1800s. They craft all their whiskeys using a grain-to-bottle approach – from sourcing grains harvested by preferred farmers to milling, mashing, distilling, aging, and bottling on-site. The Koval Four Grain is made from oat, malted barley, rye and wheat, which is an interesting combination you won’t see soon at other distilleries. Maturation took place in heavily-charred new oak barrels from Minnesota.
