Mizunara is a quintessential Japanese type of oak. It is not the easiest to handle and poses all kinds of problems for coopers and whisky makers. Yet Japanese whisky that has matured in Mizunara oak is highly sought after, because it imparts certain unique characteristics and because it is very rare. Kaiyo Mizunara Oak is one of the few Mizunara matured whiskies available. Maybe most interesting is that all casks of Kaiyo go on a final 3-month voyage, to mature further at sea.
