A bottling of Gordon & McPhail, who buy new spirit from the distillery on Orkney and let it mature in their own warehouse in Elgin (Speyside) on sherry and bourbon casks. G & M is known for their so-called 'wood management' meaning their choice of cask type. They have their own philosophy about which type of wood suits a distillery. Therefore, their bottling is different from that of the distillery itself. This 8 years matured Highland Park is therefore slightly softer and fruitier.
