Co-founder Alex Nicol thought that this special version had to represent some great Scottish produce. Their master distiller and a team of 4 at Heriot-Watt's MSc in Brewing and Distilling graduates, examined the Scottish coast in search of the perfect indigenous ingredients for a typical Scottish coastal flavor. After extensive experiments, they found this in a combination of seaweed, ground ivy and grasses, which has a slightly sweet, but still give refreshing mineral-like taste to the gin.
