Unknown to many, rum has been made for generation in the Philippines, although very little was exported. Don Papa Rum is named after Dionisio Magbuelas, a hero of the Philippine revolution who is better known as ‘Papa Isio’. The rum is made with molasses from sugar cane that was grown on the Philippine Negros Island. A column still did most of the hard work after which the rum aged for 7 years in ex-bourbon barrels in the foothill of Mount Kanlaon.
