Akashi Toji Malt & Grain is a product of Eigashima, a humble distillery that is the oldest whisky producer in Japan on paper. They received their distilling license in 1919, but it took them until 2007 to release their first single malt. Toji is a name given to a grand master in sake making, and this Japanese blend was put together by one of those grand masters. The use of a smaller pot still than commonly found in whisky production has played an important part in this whisky’s characteristics.
